Okay, calm downnn! I know these aren’t “real” tacos ? but another delicious way too eat more veggies. You can even put them inside a tortilla??. As you guys know I make both raw and cooked vegan recipes. I just want people to have options and enjoy food in different ways! For our raw ”tortillas” I’m using swiss chard. For our filling: 1 carrot, 1 green squash, 1 red bell pepper, about 2 cups of mushrooms, 1/3 cup pecans, 1/4 cup chives, 1 lime, 1/2 tbsp agave (optional), salt, pepper, pinch of cumin, 1/3 cup cilantro, and garlic. For the salsa: 2 juicy mangos, habanero (you decide how much??), half of lime, salt, agave if its too spicy, and 1 avocado. Add water if needed when blending. FRESHAF
